Major Influences

Aside from the animal/breed, it's "terroir" and time of milking, how a cheese is processed and aged, whether the milk has been pasteurized, the butterfat content, bacteria and mold inoculations, processing, aging, smoking and the addition of herbs and spices also contribute to the flavor and texture of cheese.
